Before we pass judgment on how we define a pizza, keep in mind that culinary rules are constantly evolving. They have been baking and eating flatbreads topped with savory sauces and fresh herbs in Campania (the birth place of Pizza) for over 2 thousand years. The tomato didn’t arrive in Italy until around 1550, brought from the new world by returning Spanish explorers. The classic cheese and tomato pizza didn’t appear until the late 1800’s, so the white pizza is actually more of an old classic than the pizza that sets the standard today.
